Last Monday was a snow day, and a much needed one at that.
Snow days are one of those special unexpected things that can make your whole week. I remember being in school and being so elated when school was cancelled, which it often was not as snow is not a rarity in Vermont. My work wasn’t going to close and we were just going to have a 2 hour delay, but that morning decided to close the doors for the day! So this was my first work snow day! Living 45 minutes away, this was a blessing – I didn’t want to have to travel almost 2 hours to work, which is what my commute probably would have been with the road conditions. I usually have a green smoothie every morning during the week to bring to work, but because I had the day off I decided to make something a little different and go for a smoothie bowl instead! I’ve gotten some serious smoothie bowl inspo from Instagram when I started my blogging journey, but since I normally bring my smoothies to work I don’t have enough time to create a photo-ready smoothie bowl. So today, I’m really just giving you instructions on how to make the smoothie I make every morning, and let you in on how I transformed it into a smoothie bowl for this snow day!
For the best smoothie texture, you should invest in a Nutri Ninja. Since purchasing one two years ago, my life has never been the same. Since it has such high speed, it breaks up greens and fruits and you would never know how much you actually are putting into your smoothie! Last week, Luke watched me make one for the first time in a while (he is usually still sleeping or showering while I am almost out the door for work) and exclaimed, “Wow, that’s how much spinach you put into it?” He had no idea!
Green Smoothie Bowl
- baby spinach
- almond milk, coconut milk, or a blend of both
- frozen fruit of your choosing
- protein powder
- chia seeds, for topping
- fresh fruit of your choosing, for topping
- granola, for topping
- Layer your ingredients as follows into the Ninja cup: 1/2 cup baby spinach, 1 chopped banana, 1 cup almond/coconut milk, 1 scoop protein powder, 1/2 cup frozen fruit
- Blend for about 30-60 seconds, and enjoy as a smoothie! Or…
- Pour into a bowl and top with chia seeds, fresh fruit (apples, more banana, or berries), and granola!
